AROMA:
The nose is also indicating some maturity. There is a hint of complexity here, with a lot of dried spices, with yeah spice box, cedarwood, dried fruit, such as plum and cherry. And a floral hint.
COLOUR:
Orange and quite rusty colour showing development.
TASTE:
La Bioca Barolo Aculei is a good bite on the palate. Already with a fine integration of the tannin. There are obviously present but finely grained. There is a slight hint of roasted wood present as well, slight hint of vanilla, some roasted notes. Really good weight. It starts out with a lot of primary fruit, but on the finish, there are more things going on. A lot of spiciness and well-rounded. It almost adds a slight sensation of sweetness. There is a lot of ripe fruit. Yet it is obviously a bone-dry wine with a good level of freshness.
FOOD COMBINATION:
It presents itself pretty well today. I would happily drink it but it should certainly gain more complexity and harmony from further ageing in a good cellar. Red meat and hard or matured cheese. Highly recommended with food enriched with truffles.
