AROMA:
Intense, fresh, with fruity notes of cherry, raspberry and floral reminiscent of violet, vanilla and spices.
COLOUR:
Ruby red with light garnet reflections of medium intensity, bright and lively.
TASTE:
Montanello Barolo Castiglione Falletto is full, harmonious, slightly dry with a pleasant finish. First a delicate pressing is carried out to avoid tearing the skins, then a fermentation in steel tanks at a controlled temperature; the extraction of anthocyanins and polyphenols from the grapes takes place by wetting the cap of the skins with the must, by means of automated rotary sprayers.
During the aging of the wine in barriques, a constant temperature of 16-17 degrees is maintained in the cellar, and a humidity of around 80% throughout the year. The Barolo is aged for three years (as required by the DOCG disciplinary), of which the first two in oak barriques from France (forest of Allier), finally undergoes a refinement in the bottle for at least 6 months, before being marketed.
