Maceration on the skins for 18/20 days, with careful controlling of the temperature, and natural fermentation with native yeasts.
FOOD COMBINATION:
At its very best served with red meat roasts, game, truffle-flavoured dishes and mature cheeses, or more simply as a good glass of wine for meditation.
